How to make cracker cookies step by step
Making Chocolate Peanut Butter Ritz Cracker Cookies is easy. It's a great recipe to do with your littles or when the family is home for the holidays.
- PREP - line a baking sheet with parchment paper or wax paper.
- MAKE FILLING - mix the peanut butter and powdered sugar in a medium bowl with a spatula or spoon.
- MAKE CRACKER COOKIE - place about a teaspoon and a half of the peanut butter mixture on each cracker. Then, top with another cracker and smush down the filling, but don't let it ooze over the edges. Place it on the baking sheet.
- MELT CHOCOLATE - in a microwave-safe bowl, place chocolate wafers. Melt according to the package instructions. OR microwave at 50% power for 1 minute. Stir, then microwave at 30-second increments stirring after each heating until the chocolate is melted and smooth.
- DIP and SET - using a fork, dip the cracker cookie in the melted chocolate turning it to cover all sides. Next, pick it up on the fork and tap it on the side of the bowl to smooth them out and remove any excess chocolate. Place each one on the parchment-lined baking sheet. If using, top with sprinkles while still soft. Let them cool and set for about 20 minutes.
Note: you can also melt your chocolate by using the double boiler method.

Am I able to use other fillings? Any suggestions? I was thinking of Nutella, guava paste, or cream cheese mixed with either both other suggestions.
Erin Henry
Hi, yes, you can use other fillings. I would make sure they aren't too runny so that the cookie/cracker stays together. Nutella sounds delish! If you use cream cheese, keep them in the fridge!
Stephanie
