What Are Overnight Oats?
Overnight oats are a no-cook method of making oatmeal. You combine oats with your choice of liquid and chia seeds, let them soak overnight in the refrigerator, and voilà! You have a thick, pudding-y, and nutritious breakfast ready to go in the morning. This method is not only convenient but also allows the oats to absorb all the flavors you mix in.

Why You’ll Love this Cookie Butter Overnight Oats Recipe
- Quick and Easy: Perfect for busy mornings, this recipe requires minimal effort to yield several days of breakfast.
- Nutritious: Packed with whole grains, fiber, and healthy fats, these overnight oats will keep you full and satisfied.
- Deliciously Indulgent: The cookie butter adds a rich, sweet flavor that makes these oats feel like dessert more than breakfast.
Ingredient Notes
These overnight oats require a few simple ingredients:
- Old-Fashioned Oats: My favorite brownie mix is Ghirardelli, but any brownie mix will do!
- Vanilla-Flavored Unsweetened Almond Milk
- Cookie Butter: I'd use any neutral oil you have on hand (avocado oil, canola)
- Chia Seeds: I know chia seeds are a "love them or hate them" ingredient. You can omit them from this recipe, but just know that you won't get that pudding texture.
Nutritional Benefits of Overnight Oats
Overnight oats are a powerhouse of nutrition. Rolled oats provide a great source of complex carbohydrates, ensuring you have sustained energy throughout the morning. Chia seeds add fiber, protein, and healthy fats, making this breakfast even more filling.
The cookie butter simply adds an incredible dessert vibe to these overnight oats to make them a breakfast to look forward to!
Top Tips
Adjust the Consistency: If you prefer your oats a bit thinner, add a splash of almond milk in the morning to reach your desired consistency.
Make a Big Batch: These oats store well in the fridge for up to five days, so feel free to make a large batch and enjoy them throughout the week.
Storing Overnight Oats
One of the reasons to love overnight oats is that you can make a big batch and enjoy it all week. I will usually 5X any overnight oats recipe and enjoy them for breakfast every day. I use these jars for my overnight oats.
