- Spices: Sheet pan fajitas use a blend of simple spices you probably already have in the cabinet. You will need chili powder, cumin, paprika, coriander, salt, and pepper. You can also use our homemade taco seasoning in this recipe.
- Chicken: Use chicken breast or chicken thighs. No matter which you choose, buy skinless and boneless to make prep easier.
- Veggies: Classic fajita veggies include bell peppers and onion. Use a blend of bell pepper colors for a more colorful meal.
- Olive oil: A healthy oil for cooking, but you can swap it for your preferred cooking oil. Be sure to choose one that's relatively neutral in flavor.
- Fresh garlic: Adds flavor to the chicken and veggies as it cooks. I prefer the flavor of fresh rather than garlic powder.
- Lime: Fresh lime juice is best! It's added after cooking and adds a true burst of bright flavors.
- Cilantro: For color and its unique flavor.
- Flour Tortillas: Traditionally used for fajitas, but you can swap them for corn tortillas or your favorite gluten-free tortilla if preferred.

The sky is the limit, so pick everyone's favorites. Serve them up in bowls and let everyone add them to their liking.

How to Make Baked Chicken Fajitas
Call us lazy cooks, but the fewer dishes we have to clean up and wash after dinner, the better.
So, as we said, oven-baked fajitas are just about as easy as pulling out your baking sheet, which is great!
STEP 1: Mix your spices and slice your chicken, peppers, and onions, but the rest of the recipe comes together right in your pan. Did we mention ONE PAN CLEAN-UP?
STEP 2: Place the chicken and veggies on the sheet pan, and season it with your Mexican spices and a bit of oil. Mix it around, and you're ready to pop it in the oven at 400 degrees F. Bake it for about 20 minutes. Give or take.
With about 5 minutes left, wrap your tortillas in foil and place them in the oven with your pan. See, this is easy!
STEP 3: Once the meat, peppers, and onion are out of the oven, squeeze some fresh lime juice over the pan. Mmmm, it should smell delicious at this point.
Place your fajitas in one of the warm tortillas and top it with a dollop of sour cream or salsa, a sprinkle of cheese, and a bit of cilantro, If you're a fan. We know some people think cilantro tastes like soap. Who knew?
How to Store and Reheat
To store leftovers, transfer them to an airtight container, and when cooled, cover the container with a lid. They will last up to five days in the fridge or three months in the freezer.
The best way to reheat leftover fajitas is in a skillet on the stove. This keeps the chicken from getting rubbery and the veggies from getting soft. If you're in a hurry, a microwave will do.
If your leftovers are frozen, make sure you thaw them out in the fridge overnight before reheating.

Baked Chicken Fajitas Recipe
Ingredients
Spice Mixture
- 3 teaspoons chili powder
- 1 ½ teaspoons ground cumin
- 1 teaspoon coriander
- 1 teaspoon paprika
- dash of red chili pepper (optional)
- salt and pepper (to taste)
Fajitas
- 1 ½ pounds boneless skinless chicken breast (sliced into thin strips - thighs also work)
- 1 red pepper (cut into strips)
- 1 green pepper (cut into strips)
- 1 yellow pepper (cut into strips)
- 1 large onion (sliced)
- 2 cloves garlic (minced)
- 3 tablespoons olive oil
- 2 teaspoons fresh lime juice
- 3 tablespoons chopped cilantro (optional)
- 8 flour tortillas (or corn tortillas warmed for serving)
- optional toppings: sour cream (salsa, avocado, quacamole, and cheese)
Instructions
- Preheat oven to 400 degrees. Mix spices together in a small bowl and set aside.
- Place sliced peppers and onions on a baking sheet and top with sliced chicken. Sprinkle spice mixture and garlic on the chicken. Top all ingredients with olive oil and mix until well combined. Spread evenly in the pan. Roast in the oven for 20-25 minutes, turning once halfway through.
- Place tortillas wrapped in foil in the oven for the last 5 minutes of cooking to heat through. Once the chicken and peppers are out of the oven, drizzle lime juice over the top and mix. Sprinkle on cilantro and serve in warm tortillas with your favorite toppings.

A serving is one taco. The recipe was calculated using regular size tortillas. If you use small tortillas, it would be two tacos per serving.
