They're crispy around the edges with an ooey-gooey fudgy-cakey center; perfect for a post-work or school pick me up!

Why Cookies Instead of Brownies?
I don't know about you, but I love cookies way more than brownies. But I've never seen a box mix for cookies (only refrigerated cookie dough) making it hard to store for a random day when I need a cookie fix.
I took all the best parts of brownies (the fudginess, the crackle top), and turned it into a hybrid brownie-cookie that bakes in 8 minutes!

Ingredient Notes
These cookies require a few simple ingredients:
- Brownie Mix: My favorite brownie mix is Ghirardelli, but any brownie mix will do!
- Eggs
- Vegetable Oil: I'd use any neutral oil you have on hand (avocado oil, canola)
- Milk: You can use dairy-free, but I used 2% regular milk
- Chocolate Chips: Some brownie mixes already have chocolate chips in them (thanks, Ghirardelli), so you can omit them if you don't want extra chocolate chips.
Top with: Sprinkle with some flaky sea salt if you're feeling extra fancy!
Storing These Brownie Mix Cookies
Umm...who is making cookies and not eating them all immediately?
If you're one of the few people who can control themselves and only eat one or two cookies, you can store them in an airtight container at room temperature for up to 1 week.
Top Tip
Let the batter rest for 5-10 minutes if you're not in a rush. This will make the batter thicker and it won't spread as much, giving you more control on the shape of the cookies when you spoon it onto your greased cookie sheet.
A Few Baking Notes:
With cookies, I almost always under bake them. Mostly because I love a soft cookie, but also because they will continue to bake on the cookie sheet even after you take them out of the oven. 1-2 minutes on a hot baking sheet can make a big difference depending on the consistency of your cookie batter.
With brownie mix cookies especially, less is more (re: baking time) if you're going for that fudgy center. Times for baking will vary from oven to oven, but 8 minutes is the sweet spot for me. Keep an eye on the edges of the cookies. Once they are crackly on top, you can usually take them out and let them continue to cook for 1-2 minutes on the hot cookie sheet.

Easy Brownie Mix Cookies
Equipment
- mixing bowl
- Mixing spoon or spatula
- baking sheet
- parchment paper
Ingredients
- 1 box brownie mix
- ¼ cup vegetable oil
- 1 tablespoon milk
- ¼ cup dark chocolate chips
- sea salt, to top (optional)
Instructions
- Preheat your oven to 350 degrees F. In a medium-sized bowl, pour in the brownie mix. Then, whisk in the eggs, milk, and oil. Whisk until smooth.
- Fold in chocolate chips (if the brownie mix did not already include them). Feel free to add more chocolate chips if the mix already had them included. Let the batter rest.
- Grease a cookie sheet or line it with parchment paper. Spoon one tablespoon of batter and make sure to include plenty of space in between each cookie, as these cookies will spread considerably.
- Bake in the preheated oven for 7-8 minutes until cookies are mostly baked through. The middle may still be underbaked, and that's okay! Take them out and let them cool on the pan for a few minutes before transferring to a wire rack.
- Top with flaky sea salt for some balance to the sweetness!
