Growing up, you couldn't catch me at an Indian restaurant without a cold glass of frothy mango lassi. Mango lassi is a vibrant, tangy, tropical drink that is a staple in Indian cuisine. It's made with mango (obviously), yogurt, and milk, but my favorite part is the quintessential flavor that ground cardamom brings.

I'm always fascinated by the history of food, so here's a little tidbit about the origins of "lassi". Lassi is one of the oldest beverages in Indian cuisine, dating back over a thousand years. Originating in the Punjab region of India and Pakistan, lassi was traditionally made by churning yogurt with water and spices to create a refreshing drink (duh, because of the crazy hot summer temps in India). The classic form of lassi comes in two main varieties—sweet and salty. Salty lassi, often infused with cumin or other spices, was a staple for cooling the body, while sweet lassi, flavored with sugar or fruit, became a popular sweet treat.
Inevitably, it was only a matter of time before mangoes were added to sweet lassi. Mangoes are found in abundance in India. Indian mango varieties such as Alphonso, Kesar (my favorite), and Dasheri provided the perfect natural sweetness, making Mango Lassi even more popular over the original plain sweet lassi.
