- Baby Potatoes: Creamy baby Yukon gold potatoes take up a third of your sheet pan. You’ll half or quarter them into uniform pieces.
- Fresh Broccoli: Roasted broccoli florets are one of the best veggies. Paired with the pork and potatoes, it’s a complete meal.
- Olive Oil: You’ll use extra virgin olive oil for roasting the potatoes and broccoli.
- Spices: Garlic powder, onion powder, and paprika enhance the flavor of these pork chops.
- Kosher Salt and Black Pepper to taste.
- Parmesan Cheese: This is what brings the dish together. It adds a nice nutty flavor. Finely grated is best for sticking to the pork.

- Prepare Seasoning: In a small bowl, mix the garlic powder, onion powder, paprika, Parmesan cheese, salt, and black pepper (Image 1).
- Prepare Potatoes and Bake: Cut the potatoes into 1-inch pieces and season them with 2 tablespoons of olive oil and 2 tablespoons of the seasoning mix. Drizzle with lemon juice (Image 2). Arrange them on ⅓ of the prepared baking sheet and bake for 5-10 minutes while you prep your pork.
- Prepare Pork and Bake: Season pork chops on both sides with the remaining seasoning blend. Pat seasoning mix in to make sure it sticks (Image 3). Add pork chops to ⅓ of the pan and bake for 10 minutes.
- Prepare Broccoli and Bake: Toss broccoli florets in one tablespoon of oil, salt, and pepper, any of the leftover spice mix, and a drizzle of lemon juice if desired. Place them on ⅓ of the baking sheet, return the pan to the oven, and bake for another 10-15 minutes, or until the pork chop reaches an internal temperature of 145°F (63°C) on a digital meat thermometer, and the vegetables are tender.
