Finding recipes that bring the family together around the table can be challenging. I like to think of this oven-baked Sausage Frittata with Veggies as my secret weapon for an easy weeknight dinner or weekend breakfast everyone loves.
Not only does this frittata recipe include savory sausage and some healthy vegetables nestled inside, but it also has one of our favorite ingredients--cheese!
And wow, is it good. Melt in your mouth good!
Plus, it's low-carb, and you can freeze leftover Frittata for meal prep!

Ingredient Notes
There are a few simple ingredients to make a Sausage and Egg Frittata:
Eggs - large eggs are the base of the recipe.
Egg Whites - either from a carton or fresh egg whites separated from the yoke. This gives some lightness to the recipe.
Crumbled Sausage - ground pork, chicken sausage, or chorizo works well. You could also use fresh or frozen ham.
Milk - we like full-fat to add a rich, creamy flavor and texture, but we have also made it with low-fat milk with good results.
Garlic Powder - a spice added for a little flavor kick.
Olive Oil - this healthy oil is needed to saute the veggies.
Veggies - I like broccoli, spinach, peppers, broccoli, and onions, but whatever your preference, your result will be delicious.
Cheese - we like cheddar, but your favorite will do just fine!
Variations
There are so many ways to enjoy your frittata. Here are a few of my favorites:
- Broccoli, cheddar, and green onion. (kid-approved)
- Cremini mushrooms, arugula, and goat cheese.
- Tomatoes, zucchini, mozzarella, and basil.
Herbs and Spices
Fresh herbs like parsley, basil, or thyme can enhance the overall flavor. A pinch of smoked paprika or red pepper flakes can add a subtle kick.
No matter the combination of ingredients, try an oven-baked frittata and make some delicious memories around your family table.
How To Make A Sausage Frittata Recipe
A Frittata is an egg-based Italian dish similar to an omelet or scrambled eggs. We like to call it a crustless quiche, and it's pretty straightforward to make.
The other wonderful thing about an oven-baked sausage frittata is its versatility. You can literally clean out your fridge and use whatever veggies you have on hand to flavor it and punch up the nutrition.
To start, adjust your oven rack to the middle position, preheat to 400 degrees F. (204 degrees Celsius), and grab your oven-safe skillet!
STEP 1 - BROWN SAUSAGE
First, brown your ground sausage over medium heat in a cast-iron skillet or oven-safe skillet. Then, remove the meat from the pan and drain the fat. Set aside.
STEP 2 - COOK VEGGIES
Next, add the olive oil to the same pan and saute the onion and peppers for 3-4 minutes. Add the zucchini and saute for 2-3 minutes more.
Now, add your spinach and let it cook in the mixture for 1-2 minutes.
While your vegetables cook on the stove, steam-cook your broccoli in the microwave for 1-2 minutes. Drain when it is done.
Pro Tip: Steam cook your broccoli by placing it in a microwave-safe dish with a tiny bit of water, covering it, and then cooking it for a couple of minutes. It should come out tender but not too soft.
Now, mix the cooked broccoli and sausage into the veggie mixture and spread it evenly in the skillet.
STEP 3 - MIX EGGS AND EGG WHITES
In a medium bowl, whisk together the eggs, egg whites, milk, garlic powder, salt, and pepper.
STEP 4 - ADD CHEESE AND EGGS
Next, add your shredded or cubed cheese to the top of the sausage and veggies.
Then, pour the egg mixture into the pan over all the ingredients. If you like, top with parmesan cheese.
Allow mixture to cook for 3-5 minutes on the stovetop to help the bottom of the frittata set.
STEP 5 - BAKE
Place the skillet in the oven and bake for 15-20 minutes. Once your frittata is cooked through, turn your oven to broil, move the oven rack to a higher position, and cook an additional 1-2 minutes until golden brown.
Let it cool, and then slice it into wedges and devour.
How to store
Store leftover frittata in the refrigerator in an airtight container for up to 4 days. Your Frittata can be frozen for up to three months if cooled completely and stored in an airtight container.
You can get creative with your leftover sausage and veggie frittata—use a slice as a sandwich filling or toast topper, or break it up for easy breakfast burritos. Kids love these.
Our favorite is simply reheated for lunch the next day.

- Assembly: Make sure your sausage and veggies are spread evenly throughout the pan before adding your cheese and eggs.
- Pan Recommendation: We recommend a cast iron or oven-safe nonstick skillet. Stainless steel can work, but it often results in your eggs sticking to the pan if you don’t use enough oil.
- Hot Pan: Remember, your pan will be hot when it comes out of the oven. We like to wrap a towel around the handle to remind ourselves not to touch it 🙂
- Check for Doneness: Use a toothpick or knife to check if the frittata is cooked through. It should come out clean when inserted into the center.
- Rest Before Serving: Allow your frittata to rest for a few minutes before cutting. This makes it easier to slice, and the flavors continue to meld.
- Garnish: Top with fresh herbs, a sprinkle of cheese, or a drizzle of hot sauce for an extra pop of flavor.

Ingredients
- 1 cup ground pork sausage
