- low sodium chicken broth - we like to use low sodium to keep the recipe as healthy as possible.
- onion - white, yellow, or sweet onion work nicely. Just make sure to chop it finely. There is no need to cook it before putting it in the crock pot.
- Italian seasoning - we like to use dried Italian seasoning, which usually includes basil, oregano, thyme, and sometimes rosemary and marjoram.
- fresh garlic - mincing fresh garlic gives this dish the most flavor, but you can also use garlic powder.
- salt and pepper - finish the dish and round out the flavors.
- chicken breast - boneless, skinless chicken breast keeps this recipe low in fat, and the slow cooker keeps it tender and juicy.
- frozen vegetables - we usually add a carrot, pea, and green bean mix, but use whatever you have on hand or what your family prefers.
- instant brown rice - you must use instant brown rice, not regular long-grain rice.
- milk - the milk gives the recipe its creaminess. You can also substitute Greek yogurt.
- mozzarella cheese - this shredded cheese makes the dish nice and cheesy. Cheddar cheese is also a good option.
- fresh lemon (optional) - a squeeze of fresh lemon juice ups the flavor profile.

This Chicken and rice crockpot recipe is a cinch to make! No advanced cooking skills are required.
- In a 6-quart slow cooker, stir together the chicken broth, onion, Italian seasoning, garlic, salt, and pepper.
- Place the raw chicken breast in the mixture, cover, and cook on low for 4 hours or high for 2 hours.
- Once the chicken is cooked, remove the breasts and place them on a cutting board or plate.
- Stir in the frozen veggies and rice in the crockpot. Cover with the lid and cook on high for 15 minutes. While it cooks, shred the chicken by pulling it apart with two forks.
- After 15 minutes, stir the shredded chicken, milk, and cheese into the slow cooker. Cover the cook for an additional 10-15 minutes on high, until the cheese is melted and the rice is tender.
