- Potatoes: I use yellow baby potatoes but have also made this recipe with fingerling potatoes
- Grated Parmesan
- Salted Butter
- Sazon Seasoning: This is the secret ingredient! If you don't have any, you can make your own, or buy some at any grocery store!
- Salt and Pepper
Step-By-Step Instructions To Make Parmesan Crusted Baby Potatoes
Use a sheet pan or casserole dish that has higher sides (so that the butter doesn't spill over when you're trying to move it). Add the butter and put it into the oven at 450 degrees F for 3 minutes (just until the butter is melted and a little frothy).
Once your butter has melted, remove from the oven and add all seasonings to the butter. Optionally, you can spice things up with a pinch of crushed red chili flakes. Mix everything together in the dish.
Wash and slice your baby potatoes in half. I quartered some of the bigger ones. Then, use a sharp knife to slice a grid on the flesh of each potato. This will help the butter and parmesan get into all the nooks and crannies of each potato!
Sprinkle grated parmesan into your dish. Mix well with butter and spices.

- 4 tablespoon salted butter

Instructions
- Preheat your oven to 450 degrees F. Melt butter in a casserole dish for 3 minutes (just until the butter is melted and a little frothy).
- Remove the casserole dish from the oven and add all seasonings to the butter. Optionally, you can spice things up with a pinch of crushed red chili flakes. Mix everything together in the dish with a spoon.
- Set the casserole dish aside. Score the cut side of your halved baby potatoes in a grid pattern.
- Add grated parmesan cheese to your casserole dish with melted butter and seasoning. Place each halved potato cut side down into the butter mixture.
