Lightly coat a 6-quart crock pot with non-stick cooking spray. Place the peaches, ¼ cup granulated sugar, cornstarch, nutmeg, and vanilla extract in the crock pot and stir to combine.

In a medium bowl, stir together the remaining sugar, flour, baking powder, baking soda, and salt. Then, sprinkle the mixture evenly over the peaches. Top with the butter slices.

Place a paper towel or dishcloth over the crock pot so that it overhangs the sides, and cover it with the lid.   Cook for 2-3 hours on high or 4 hours on low, or until the peaches are tender and the top is golden brown.

Enjoy with vanilla ice cream or whipped cream! This crock pot peach cobbler is best served fresh, but you can store it in an airtight container in the fridge for up to 3 days.
