Whisk eggs, milk, salt, and pepper. Add cheddar and  mozzarella, hashed browned potatoes, parsley, paprika, salt, and black pepper.

Add the sausage mixture and stir until combined. Then pour it into prepared baking dish.

Top with remaining cheese.
