- boneless chicken breasts – Italian seasoning – onion – garlic (minced) – chicken broth – fire roasted diced tomatoes – penne pasta – half and half – mozzarella cheese (shredded) –  baby spinach – Parmesan cheese

Step 1

Brown Chicken: Heat olive oil in a pan over medium-high heat. Add chopped chicken and  seasoning, salt, and pepper, and cook until browned on all sides.

Cook Onions and Garlic: In the same pan, add the remaining olive oil and chopped onion and cook until softened, about 2-3 minutes. Add minced garlic and cook for another minute.

Cook Pasta & Other Ingredients: Add broth, tomatoes, pasta, chicken, and red pepper and stir. Bring to a boil, and reduce heat. Simmer  about 15 mins until the pasta is tender..

Step 4

Add Cheese: Stir in half and half and mozzarella cheese. Cook for an additional minute or until warmed through. Remove from  heat and add spinach. Stir until combined.
