Instructions
In a large mixing bowl, combine chopped pineapple, tomatoes, cilantro, red onion, garlic, and jalapeños. Drizzle with lime juice and toss to coat evenly.
Season with salt and pepper to taste. Allow flavors to blend at room temperature for 30 minutes or chill until ready to serve. Goes well with tortilla chips or over grilled chicken or fish.
Notes
Due to the high water content, we don't recommend frozen or canned pineapple.
STORAGE - Fresh Pineapple Salsa will keep in the refrigerator for about 5 days. However, it will become more watery the longer it's left.
MAKE AHEAD - This recipe is great to make ahead of time. You can prepare it in advance, refrigerate, and bring it out when ready to serve. We prefer it the next day.
FLAVOR ENHANCERS - Make any necessary flavor tweaks based on personal preference—for example, more salt or adding a pinch of sugar if you want your salsa slightly sweeter.
