Crock Pot Chicken Bacon Ranch Tater Tot Casserole with tender chicken breast, crispy bacon, cheddar cheese, and creamy ranch flavors blend perfectly in this comforting recipe.
PREP: Cook your bacon in the oven or a skillet over medium heat until crispy. Place it on a paper towel-lined plate to drain. Once cooled, crumble or cut it into small pieces. Cut up your chicken, and then coat the inside of your 6-quart crock pot with non-stick cooking spray.
START LAYERING TATER TOTS, BACON, & CHEESE. Place half of the bag of frozen tater tots into the crock pot and spread them evenly in the bottom of the slow cooker. Sprinkle with ½ of the bacon pieces and ⅓ of the shredded cheese.
MAKE CHICKEN, RANCH, & CREAM CHEESE LAYER. Place uncooked chicken cubes on top of the tater tot layer. Sprinkle the chicken mixture with garlic powder, onion powder, dried parsley, dill, and salt and pepper (the ranch seasoning). Place the cream cheese, cut into pieces on the chicken. Top that with the other ½ of the bacon pieces and another ⅓ of the cheese.
TOP WITH ANOTHER LAYER OF TOTS AND CHEESE. Spread the remaining frozen tater tots over the chicken layer and top with the remaining ⅓ cheese. Finally, pour the milk over the top of the crock pot contents.
COOK. Once you assemble your slow cooker chicken casserole, cover the crock pot with a paper towel and then the lid and cook on HIGH for 3 hours (LOW for 5-6 hours) or until the chicken is cooked through (165 degrees F.). Serve warm, and enjoy! Garnish with green onions or more bacon if you'd like.

RANCH SEASONING: It’s easy (and a little healthier) to make your ranch seasoning. However, you can also buy a 10-ounce packet of ranch mix (ranch dressing mix to use instead).
SLOW COOKER: This recipe is designed to be cooked in a 6-quart slow cooker and is about 8 servings.
MAKE-AHEAD: You can cook your bacon, cube your chicken, combine your ranch spices, and shred your cheese a day ahead. Then assemble and cook when ready.
STORING & REHEATING: Store any leftover Chicken Bacon Ranch Casserole in an airtight container in the fridge for 4-5 days. To reheat, transfer leftovers to an oven-safe casserole dish, cover it in aluminum foil, and reheat in a 350 degrees oven for 20-30 minutes.
