Lightly coat a 6-quart crock pot with non-stick cooking spray.
Place the peaches, ¼ cup granulated sugar, cornstarch, nutmeg, and vanilla extract in the crock pot and stir to combine.
In a medium bowl, stir together the remaining 1 cup of sugar, flour, baking powder, baking soda, and salt. Then, sprinkle the mixture evenly over the peaches.
Top the mixture with the butter slices.
Place a paper towel or dishcloth over the crock pot so that it overhangs the sides, and cover it with the lid. (this absorbs excess moisture) Cook for 2-3 hours on high or 4 hours on low, or until the peaches are tender and the top is golden brown.
Enjoy with vanilla ice cream or whipped cream!

Notes
You can substitute half of the white sugar for brown sugar to give your cobbler a hint of caramel flavor.
To help the top of your cobbler crisp beautifully, you'll want to place a paper towel or clean dishcloth over the top to absorb the excess moisture and allow the top of your cobbler to crisp up nicely.
This crock pot peach cobbler is best served fresh, but you can store it in an airtight container in the fridge for up to 3 days. Reheat individual servings in the microwave for 30-60 seconds.
