Nothing says fall like the comforting aroma of apple cider simmering in your kitchen. Slow cook apples and whole spices for a subtly sweet, warm drink.
Cut the vanilla bean open and open it up a little to allow the vanilla bean seeds to integrate with the rest of the cider ingredients while they slow cook.
Add all the ingredients to the crockpot insert and pour water over them until the apples are covered. Give it a little stir.
Cook on high for 3-4 hours until the apples are stewed and soft.
Use a potato masher to mash into apple sauce consistency.
Strain into a bowl or a jug using a fine mesh strainer. If you intend to keep the cider warm all day, rinse your crockpot insert after straining and discarding the apple pulp and pour your apple cider back into the insert and keep warm.
Taste the cider and add sweetener if needed.
Ladle the warm cider into mugs, garnish with a cinnamon stick, and enjoy!
