Ingredients
1poundground pork(not lean, about 20% fat)
1 poundground turkey
¼cuppure maple syrup
1clovegarlic, mincedadd more of less to your liking
2teaspoonssalt
1teaspoonfreshly ground black pepper
2teaspoonsdried sage
1teaspoondried thyme
½teaspoondried rosemary

2Tablespoonsbacon greaseghee, or fat of choice like olive oil

Instructions
Combine all ingredients in a large-sized mixing bowl. Mix with your hand, but don't over do it or the sausage will become tough.
Chill for at least an hour or overnight.
Form into patties with your hands. PRO TIP: spray your hands with non-stick cooking spray to avoid the meat sticking to you.
Fry in grease until they are no longer pink insides being careful not to overcook. 160 degrees F. is recommended.
Notes
MAKE-AHEAD: This recipe can be made and frozen in raw patties until ready to use or cooked and then frozen. FREEZER: Flash-freeze the sausage by laying the patties out individually on a cookie sheet. Freezing them and then placing them in a storage container until ready to use them. Take out as many as desired and leave in the refrigerator overnight. Cook as directed. MEAT: You can use ground chicken in place of ground turkey.
