Instructions
Prep: Preheat your oven to 400°F (200°C). Line the baking pan with parchment paper.
Prepare Seasoning: In a small bowl, mix the garlic powder, onion powder, paprika, Parmesan cheese, salt, and pepper.
Prepare Potatoesand Bake: Cut the potatoes into 1-inch pieces and season them with 2 tablespoons of olive oil and 2 tablespoons of the seasoning mix. Drizzle with lemon juice. Arrange them on ⅓ of the prepared baking sheet and bake for 5-10 minutes while you prep your pork.
Prepare Pork and Bake: Season pork chops on both sides with the remaining seasoning blend. Pat seasoning mix in to make sure it sticks. Add pork chops to ⅓ of the pan and bake for 10 minutes.
Prepare Broccoli and Bake: Toss broccoli florets in one tablespoon of oil, salt, and pepper, and a drizzle of lemon juice if desired. Place on ⅓ of the baking sheet, return the pan to the oven, and bake for another 10-15 minutes or until the pork chops reach an internal temperature of 145°F (63°C) and the vegetables are tender. Cooking times may vary, so checking for doneness periodically is a good idea.
Rest the Meat: Once cooked, remove pan from the oven and let meat rest for 3-5 minutes before serving.
Notes
Make-Ahead: When enjoying this easy dinner, fresh is best. However, you can prepare the vegetables and season the pork chops in advance. Place on the baking sheet and cook per the recipe instructions.
Pan Recommendation: Use a large baking sheet with raised edges for best results. This ensures enough space for even cooking and easy tossing of the ingredients.
Uniform Sizing: Cut the potatoes into uniform-sized pieces to ensure even cooking.
Checking for Doneness: A digital meat thermometer is the best way to know when your sheet pan pork chop dinner is done.
Rest the Meat: Allow the pork chops to rest for a few minutes after removing them from the oven. This helps the juices redistribute, keeping the meat moist and flavorful.
